PROTEIN LAMINGTONS

This recipe is not only easy to make, it’s also ground-breakingly delicious. All you need to do to make these Lamingtons is bake a vanilla protein sponge cake, slice it into rectangles, cut those rectangles in half so they become squares, sandwich them, add a bit of jam in the middle, cover the cakes in chocolate, and then roll in coconut flakes. It may sound like a lot of steps but, trust me, they’re all extremely simple. Let me illustrate them for you:
Ingredients
For the cake
½ cup liquid egg whites
¼ cup rolled oats
¼ cup Bulk Powders whey protein powder
1.5 tbsp almond butter
½ tsp baking powder
For the filling and coating
3-4 squares of dark chocolate
1 tbsp raspberry jam
1/8 cup of coconut flakes
Directions
1. First, blend all the cake ingredients together and bake in a small (ideally silicone) bread pan at 160 C for about 12-13 minutes or until, when poked with a knife, your knife comes out clean.
2. Let the cake cool and then, with a knife, cut it into three rectangles.
3. Slice each rectangle in half, add your jam to one half, and put the other half on top to form a kind of square ‘cake sandwich.’
4. Melt your dark chocolate and, once melted, dunk the ‘cake sandwiches’ in it.
5. Roll the chocolate-covered ‘cake-sandwiches’ on the coconut flakes.
6. Enjoy!
