Broccoli and Feta eggs
Ingredients:
1 cup chopped broccoli
3 large eggs, beaten
1/2 cup spinach
3 tablespoons feta cheese, crumbled
1/4 teaspoon dried basil
1 teaspoon crushed garlic
Directions:
Heat non-stick pan over low/medium heat.
Spray pan with a dash of cooking spray.
Add the broccoli and cook around 3 minutes.
Whisk the egg, feta, garlic, and basil together in a small bowl.
Add that mixture to pan with the spinach.
Cook for around 3 to 4 minutes then flip omelet.
Cook for two minutes or until done.
